The most important thing you will learn in these brunches is that this stuff is easy and fun to start doing.

You’ll also learn practical things, like how to turn $20 of beef into $100 of bresaola with nothing more than salt, string and time; or how to make wild yeast sourdough that would have a professional baker say, ‘oh, wow, not bad;’ how to use salt to change the chemical makeup of your favourite fruits and vegetables, turning them into healthy and delicious science; and so much more!!

It’s both! These two hour survey experiences will consist of a family style 3 to 5 course prix fixe meal and touch on the basics of techniques like sourdough, lacto fermentation, meat curing, snaring, mushroom identification, fishing, and whatever else the environment dictates.

Shad Roe makes amazing bottarga and goes spectacularly in scrambled eggs. Learn why shad was called ‘poor man’s salmon’ and was on every restaurant’s menu 100 years ago.

We do a seating at 9am and 11:30am every Friday, Saturday, Sunday.
